Serves 3-5
Ingredients:
- 2 chicken breasts
- 1/3 cup cream cheese
- 1 cup salsa
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
Instructions:
- Preheat the oven to 375.
- Soften the cream cheese by putting it in the microwave for 15-20 seconds. Mix the salsa and chicken in a medium-sized baking dish.
- Rub the spices onto the chicken, and then place the breasts into the baking dish, coating them in the cream cheese-salsa mix.
- Bake at 375 for 50-60 minutes. If the cream cheese starts to burn, cover the dish with a lid if you have one, or some foil if not. The chicken is done when you can shred it easily.
- Use two forks to shred the chicken in the baking dish. Let it sit for a few minutes before serving.
Notes: You can also cook this in the slow cooker. Adapt the pulled chicken recipe, just rub the spices onto the chicken before putting it, the salsa, and the cream cheese into the slow cooker.
