Baking Powder Biscuits

This recipe is adapted from allrecipes.com.
Yield: 6-8 biscuits, depending on how thinly you roll the dough.

Ingredients:
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 3/4 cup milk

Directions:
  1. Preheat oven to 450 degrees Fahrenheit.
  2. In a large mixing bowl mix together flour, baking powder, and salt. Cut in shortening with fork or fingers until mixture resembles course crumbs.
  3. Pour milk into flour mixture while stirring with a fork. Mix in milk until dough is soft and moist and pulls away from the side of the bowl.
  4. Turn the dough out onto a lightly floured surface and toss with flour until no longer sticky. Roll dough out into a sheet a little more than 1/4 inch thick. Fold dough in half and roll over it lightly with the rolling pin. Cut out with a round cutter. Press together unused dough and repeat rolling and cutting procedure.
  5. Place biscuits on ungreased baking sheet and bake until golden brown, about 10 minutes.

Notes:
  1. A comment on the allrecipes page that I have not verified for myself yet: using cold shortening makes the biscuits flakier.
  2. Another: Twisting the cutter as you cut out the biscuits prevents them from rising fully.
  3. Folding the dough in half after rolling out and before cutting makes it so the biscuits pull in half easily.
